PINEAPPLE SHRIMP SALAD

Hooray for pineapple! Hooray for shrimp! This salad rocks the classic savory pair, and OLD BAY® is the spice that brings it all together. More please!

 

Ingredients

1 pound shrimp, peeled and deveined

1 tablespoon OLD BAY® Seasoning

1 can (8 ounces) pineapple chunks, drained

1/2 cup mayonnaise

1/3 cup celery, thinly sliced

1/2 cup sliced almonds, toasted

1/3 cup red onion, chopped

lettuce, your choice

 

Directions

In a medium saucepan, bring 1 cup of water to boil. Add shrimp and 1 teaspoon OLD BAY. Cover. Cook 5 minutes or until shrimp turn pink. Drain.

Mix shrimp, remaining 2 teaspoons OLD BAY and next 5 ingredients in medium bowl. Cover.

Refrigerate at least 30 minutes.

Serve on a bed of lettuce.

Use reduced fat mayo to save 100 calories and 12 g fat per serving.
