This award-winning, easy-to-prepare recipe complements grilled tuna with a black bean and mango salsa, providing an unusual flavor twist.
Ingredients
1/4 cup olive oil
1 tablespoon OLD BAY® Seasoning
2 pounds tuna steaks
Belgian endive leaves and basil sprigs, for garnish (optional)
Black Bean Mango Salsa:
1 can (14 1/2 ounces) black beans, drained and rinsed
1 medium mango, peeled and diced
1 cup red onion, chopped
1 jalapeno pepper, seeded and finely chopped
1/2 cup fresh cilantro, chopped
1/2 cup orange juice
1/4 cup olive oil
1 teaspoon OLD BAY® Seasoning
Directions
Salsa: In a large bowl, combine black beans, mango, onion, pepper, cilantro, orange juice, olive oil and OLD BAY. Refrigerate until ready to serve.
Mix 1/4 cup oil and 1 tablespoon OLD BAY in small bowl. Brush onto both sides of tuna.
Grill over medium heat 5 to 6 minutes per side or until desired doneness. (Tuna is more moist when its center is still rosy-pink after cooking.) To serve, place tuna on a bed of salsa. Garnish each serving with endive leaves and basil.
Alternative: Tuna may also be cooked in a preheated grill pan. Cook on medium-high heat 5 to 6 minutes per side or until desired doneness.
